Pueblo Spam Recipe
Pueblo Spam Ingredients:
2 cup cooked white rice 1/2 cup chopped fresh cilantro 1 can Spam luncheon meat -, (12 oz) 1 large onion, chopped 2 cup shredded Monterey jack cheese 1/2 cup whipping cream 1 tbsp vegetable oil Warm tortillas
Pueblo Spam Preparation:
In a medium bowl, combine rice and cilantro; set aside. In a large skillet over medium-high heat, cook Spam and onion 7 to 10 minutes or until lightly browned.
Meanwhile, in 2-quart saucepan over low heat, combine cheese, cream and oil. Cook, stirring occasionally, until cheese is melted. Place rice in center of plate; drizzle with cheese sauce. Place Spam mixture around the rice. Serve with warm tortillas.
